Makes twelve 4-inch pancakes


These pancakes are so deliciously spiced, kids don't even realize that they are packed with vitamin A-rch zucchini!
1 cup whole milk
1/4 cup apple juice concentrate, thatwed 
2 tablespoons vegetable oil or melted margarine
2 eggs
3/4 cup whole wheat flour
3/4 cup unbleached white flour
1/2 cut wheat germ
21/2 teaspoons low-sodium baking powder
11/2 teaspoons vanilla extract
1/2 teaspoon nutmeg
1 cup grated zucchini, dried with paper towels

In a mixing bow1, combine the whole milk, juice , oil or margarine, and eggs. Mix thoroughly, then add remaining ingredients except the zucchini, and beat just until smooth. Fold in the zucchini. Coat a griddle with vegetable spray; heat to medium high. Reduce heat to medium and spoon on batter to make 4-inch pancakes. Heat until the surface bubbles and the bottoms are golden brown. Flip and brown the other side. Cool slightly before serving. Top with any of the sauces or syrups listed in toppings chapter.
