Complex carbohydrates are the starches (grain products and vegetables) and naturally occurring sugars (glucose/fructose in fruits and plants, lactose in milk). Complex carbohydrate are metabolized by the body over time, allowing a slow, even release of energy. In addition, foods that contain complex carbohydrates in their natural, unrefined form (grains, fruit, and milk) also contain vitamins, minerals, and fiber needed by the human body. Soluble fiber like pectin, found in apples and citrus fruits, help to slow glucose absorption by the body.

  Simple carbohydrates are the simple sugars, such as sucrose and fructose. They provide only calories no nutrients. They are found naturally, in very small amounts, in fruits and vegetables. However, it is in their refined and processed form that we find the bulk of simple sugars in the typical diet. And you'll be surprised where it shows up. I was shocked to discover that the cranberry juice I had come to love had, in face, 50 percent of its calories attributable to added sucrose! And I thought I was drinking a healthy juice!
  Simple sugars are also found in concentrated amounts in such supposedly healthy sweeteners as honey, molasses, brown sugar, and maple syrup. Don't be fooled by the huge array of products out there that call themselves "healthy" and "natural" just because they happen to contain honey. Honey is a highly concentrated simple sugar, only minutely and insignificantly better for you than table sugar.
  Although simple sugars are immediate energy sources, they are too quickly metabolized (usually in thirty minutes) to give any real energy benefits. They cause a rapid rise in blood sugar levels that overstimulates the secretion of insulin. This causes a longer-term lowering of blood sugar levels, robbing the brain and nervous system of glucose they need to function.
